I made some banana muffins yesterday for a Christmas party. I used a very simple banana bread, adapting the recipe to make the muffins gluten free and vegan. I also shortened the bake time to suit the muffins.
I blanched the bananas. Then I rinsed them in cold water in order to cool them off. Then peeled them.
